Variety of edges (hard or soft) creates the illusion of three dimension on a flat, two dimensional surface - your canvas. Hard edges occur where dark meets light (where there is high contrast in value) indicating an abrupt transition. Soft edges occur when there is a decrease in contrast across the form for a more subtle transition. If all edges in a painting are the same (either hard or soft) the work will often lack depth.
